3. White Garlic Sauce

Instructions

  1. You can de-shell the entire head of garlic by dropping it into boiling water for five to 10 minutes or smashing out each clove by pressing on the head with the side of a large knife.
  2. In the medium saucepan, melt the butter and olive oil on medium-high heat.
  3. With the garlic press, mince the cloves into the melted olive oil and butter; stir with the wooden spoon until tender.
  4. Then, add the milk and reduce the heat to simmer for five minutes.

Ingredients

  • 15 oz can Tomato Paste
  • 1 Cup Water (very warm)
  • ½ Cup Roasted Red Peppers (chopped – make them yourself or purchase them in a jar)
  • ¼ tsp Carribean Habanero Peppers (finely chopped)
  • 1 tsp Red Pepper Flakes
  • 1 tsp Paprika
  • 1 Tbsp Sugar
  • 5 Garlic Cloves (finely chopped or minced)
  • 2 Tbsp Basil (fresh and chopped)
  • 1 tsp Oregano (dried)
  • 1 tsp Salt
  • 1 tsp Black Pepper (fresh ground)

Instructions

  • With the knife and cutting board, chop the roasted red peppers into chunks and then finely chop or mince the garlic. Chop the basil too.
  • Put on the latex gloves (and goggles if needed) and carefully clean the Caribbean Habanero pepper. Remove the stem, slice the pepper open lengthwise and remove the seeds with the opposing side of the knife’s blade. Chop finely.
  • Combine the tomato paste and the water in the large mixing bowl with the wooden spoon until you achieve a thick consistency.
  • Add the garlic, roasted red pepper, basil and Habanero along with the rest of the spices.
  • In airtight container, put the sauce in the fridge for four hours and then slather it on your preferred crust.
